On the other hand, we have forgotten how to feed ourselves simply. We have complicated cooking with unnecessary techniques, exotic ingredients and fancy presentations. But real cuisine, that which nourishes the soul and the body, is simple. At 45, I chose to return to this simplicity. A piece of meat, a little salt, fire. That's all. Low-carb is the perfect expression of this philosophy. It means removing everything that is superfluous to keep only the essentials. That’s the beauty of the little.
This simplicity demands great demands. When you only have three ingredients, they have to be perfect. You can't cheat. We must seek out the best meat, the noblest wood, the purest salt. We must control the gesture, the time, the heat. It is a form of asceticism that brings immense satisfaction. We rediscover the value of things. We learn to respect the product and the work of nature. Simply feeding is an act of humility and gratitude. It’s recognizing that nature has already planned everything.
Clarity of need
This is precisely where to feed simply, you must first understand your own needs. Sugar and carbohydrates create artificial needs, cravings that are not hunger. By removing them, we find clarity. We know exactly what our body needs to function. We are no longer in compensation, we are in nutrition. It's an incredible feeling of inner cleanliness. We feel light, lively, efficient. We are no longer burdened by the superfluous, both on our plate and in our mind.
This clarity is reflected in my cooking. On my grill, every gesture has meaning. Nothing is done for showoff. We seek accuracy, not originality. Low-carb forces us to be honest. You can't mask bad meat with a sweet sauce. We must accept the reality of the product. It is a school of truth that makes us better, as cooks and as human beings. Simplicity is the ultimate sophistication, because it requires total mastery of oneself and one's art.
The pleasure of the essential
For my part, what a pleasure to eat food that has meaning! Food that gives us energy without weighing us down. Food that respects our biology and our culture. Low-carb is not a restriction, it is a liberation. We free ourselves from dependence, fatigue, confusion. We find the simple and pure pleasure of true satiety. We feel nourished, in the deepest sense of the word. It is a feeling of peace and strength that accompanies us throughout the day.

It's obvious: Ultimately, I want to pass this truth on to my children. Don't get lost in the complexity of the world. Look for simplicity. Learn how to light a fire, choose a good product, and listen to your body. Low-carb is a legacy of health and freedom that I leave them. A tool to stay strong and clear in a confusing world.
