When I eat

Stable energy

In reality, this fat creates stable, lasting, unwavering energy. No insulin spikes, no blood sugar drops, no dips at 11 a.m. or 4 p.m. We are on a constant performance plateau. It's like a hardwood fire that burns slowly and steadily, unlike the glucose straw fire that goes out as quickly as it's lit. This stability changes our relationship to time and effort.

Respect and freedom

On the other hand, respecting this signal means respecting the body. Don't abuse him with absurd diets, don't force him to eat what he doesn't want. It's a friendly conversation with yourself. By giving the body high quality fats, we tell it that we love it, that we trust it. He responds by offering us his strength and clarity. It’s a virtuous circle that transforms our entire lives, well beyond the plate.
