Proteins and vegetables as a framework

The pillars of vitality

In my conception of nutrition, proteins and vegetables constitute the essential backbone of all lasting health. At 58, I have seen many theories come and go, but nothing replaces the solidity of this fundamental duo. My low-carb cuisine is based on this strategic alliance. High-quality proteins — pastured meats, wild fish, free-range eggs — provide the building blocks of our body. Non-starchy vegetables provide the fiber, minerals and vitamins necessary for its proper functioning. It is a simple, robust and incredibly efficient structure. We eliminate the superfluous to concentrate on the pillars of vitality.

It is interesting to note that this framework allows limitless creativity. Contrary to what one might think, going without starchy foods is not a restriction, it is a liberation. We rediscover the rich textures of vegetables and the depth of flavors of well-prepared meats. We play with cooking methods, spices and herbs to create dishes of great aromatic complexity. My cuisine is a celebration of these raw products, magnified by technique. We don't fill the plate, we structure it. Each element is chosen for its contribution to the overall balance. It is a gastronomy of substance, where pleasure is inseparable from health. Structure is the key to culinary elegance.

Quiet strength

This nutritional structure gives us quiet strength. By nourishing our muscles and organs with the right nutrients, we gain endurance and resistance. We no longer experience the energy fluctuations linked to the consumption of carbohydrates. We feel solid, stable, ready to face the challenges of everyday life. For me, low-carb is as much a performance strategy as it is a health strategy. It’s giving our body the means to achieve its ambition. My clients often report renewed vitality and better physical recovery. This is proof that the protein-vegetable framework is the ideal engine for human beings. We build our health on healthy foundations.

Beyond that, this strength also manifests itself in increased mental clarity. A well-nourished body is a well-disposed mind. We find new concentration, patience and serenity. We are more present, more efficient, more balanced. My kitchen is a support for this overall harmony. By choosing foods that respect our biology, we offer ourselves a richer and more fulfilled life. It is a conscious choice, a joyful discipline that allows us to age with grace and dynamism. The framework is the foundation of our freedom. For a toned body and a radiant mind. This is my philosophy as a chef.
