Ingredients
cauliflower (detached into florets) cauliflower (detached into florets)

almond powder almond powder

salt, pepper, nutmeg salt, pepper, nutmeg

Instructions
  1. Preheat the oven to 200°C (static heat). Cut the cauliflower into regular sized florets and dry them.
  2. In a bowl, mix the almond powder, half of the grated cheddar, melted butter, a pinch of nutmeg, salt and pepper until you obtain a sandy texture.
  3. Spread the florets on a baking tray, drizzle with olive oil and roast for 18–20 minutes until golden and tender.
  4. Transfer the roasted cauliflower to a gratin dish, sprinkle with the remaining cheddar then cover evenly with the almond powder/cheddar mixture. Bake for an additional 8–10 minutes until the top is golden brown and crispy.
  5. Leave to rest for 2 minutes then serve hot, possibly garnished with chopped chives.

Variants
  • Replace the cheddar with a parmesan/gruyere mixture for a different touch.
