Ingredients
2 smoked or fresh mackerel fillets 120 150g each 2 smoked or fresh mackerel fillets 120 150g each
Juice of 1 half lemon Juice of 1 half lemon
2 tablespoons of extra virgin olive oil 2 tablespoons of extra virgin olive oil
Fine zest of a lemon to finish Fine zest of a lemon to finish
Salt and freshly ground pepper Salt and freshly ground pepper

Instructions
  1. Prepare the fillets, wipe them dry and season lightly with salt and pepper.
  2. Heat a frying pan over high heat, brush with oil and sear the fillets for 2 to 3 minutes.
  3. While cooking, mix lemon juice, olive oil and zest to make a simple vinaigrette.
  4. Drizzle the vinaigrette over the fillets and let sit for 2 minutes.

Variants
  • Add pieces of black olives for a more Mediterranean note

Tips
  • Do not add too much salt if the mackerel is smoked.
