Instructions
  1. Toast the almonds dry in a pan for 2 to 3 minutes, then set aside.
  2. Melt the butter until a hazelnut color, add the sole fillets and cook for 2 minutes per side.
  3. Squeeze the lemon juice over the sole, pour in the browned butter, sprinkle with almonds and parsley, then serve immediately.

Tips
  • Sole cooks very quickly, do not overdo it: Brown butter gives rich flavor;
